Beef and Carrot Tagine

Ingredients

  • 2 1/2 lbs. beef stew meat
  • 2 tsp paprika
  • 1 1/4 tsp salt
  • 1 tsp ground cumin
  • 1 tsp fennel seeds, crushed
  • 1/2 tsp ground cinnamon
  • 1/2 tsp black pepper
  • 1 lb. carrots, cut into 1-inch pieces
  • 1 cup canned crushed tomatoes
  • 1/2 cup water
  • 1/3 cup raisins
  • Almond couscous (see recipe), for serving

Directions

  1. Place beef in a slow cooker. Sprinkle with paprika, salt, cumin, fennel seeds, cinnamon and pepper; toss to coat. Pile carrots on the beef and pour tomatoes and water over the top. Cover and cook on LOW for 8 hours.

  2. Stir raisins into the slow cooker, cover and let stand for 5 minutes.

  3. Serve with Almond Couscous.
