Almond Couscous

  • 1 1/2 tbsp. olive oil
  • 1/3 cup sliced almonds
  • 1 3/4 cups whole-wheat couscous
  • 1 3/4 cups water
  • 1 tsp salt
  • 3 tbsp. chopped fresh cilantro


  1. Heat olive oil in a medium saucepan over medium heat. Add almonds and cook, stirring, until golden, about 2 minutes. Add couscous and stir to coat. Add water and salt. Bring to a boil over high heat. Cover and remove from heat; let stand for 10 minutes. Fluff with a fork and stir in cilantro.
