Tortellini Antipasti Skewers

  • 50 refrigerated cheese tortellini
  • 50 fresh mozzarella cheese pearls
  • 25 (1-inch) pieces orange bell pepper
  • 25 (1-inch) pieces red bell pepper
  • 25 thin slices pepperoni
  • 25 (4-inch) wooden skewers
  • Prepared pesto, to serve
  • Garnish: chopped fresh oregano, black pepper


  1. Cook tortellini as directed. Rinse under cold running water to stop the cooking process.

  2. Alternately thread tortellini, cheese, bell peppers, and pepperoni onto skewers. Just before serving, drizzle with pesto. Garnish with oregano and black pepper.
