Mushrooms and Greens Pizza

Ingredients

  • 10 oz. package pizza crust
  • 1 cup ricotta cheese
  • 2 tbsp. milk
  • 2 garlic cloves, minced
  • 3/4 tsp kosher salt, divided
  • 1/2 tsp black pepper, divided
  • 2 cups finely chopped fresh collard greens
  • 1 tbsp. olive oil
  • 1 tbsp. balsamic vinegar
  • 3/4 cup sliced fresh baby Portobello mushrooms
  • 1/2 cup shredded sharp white Cheddar
  • 1/4 tsp crushed red pepper

Directions

  1. Preheat oven to 450.

  2. Place pizza crust on a large baking sheet or cutting board.

  3. In a small bowl, stir together ricotta, milk, garlic, 1/2 tsp salt and 1/4 tsp black pepper. Spread mixture in an even layer onto crust.

  4. In a medium bowl, massage together collards, oil, vinegar, remaining 1/4 tsp each salt and pepper until greens are slightly wilted. Sprinkle greens mixture, mushrooms, Cheddar and red pepper onto ricotta mixture. Carefully slide pizza directly onto middle rack of oven.

  5. Bake until golden brown and cheese is melted, 10-12 minutes. Serve immediately.
