Mexican Meatball Taco Filling

Ingredients

  • 1/2 lb. ground beef
  • 1/2 lb. ground pork
  • 1/2 jalapeno, minced
  • 1/2 onion, minced
  • 1/2 garlic clove, minced
  • 2 tbsp. uncooked rice
  • 1 egg
  • 1 tsp dried oregano
  • 1 tsp ground allspice
  • 1 tsp kosher salt
  • 2 cups chicken broth
  • 15 oz. can diced tomatoes
  • 1/2 jalapeno
  • Pinch of thyme

Directions

  1. Mix beef, pork, jalapeno, garlic, onion, rice, egg, oregano, allspice and salt; form into 1-inch balls. Bring chicken broth, tomatoes, jalapeno, and a pinch each of thyme and kosher salt to a simmer in a large skillet. Add the meatballs and simmer until cooked through, about 30 minutes. Serve in taco shells with toppings.
