Pork Carnitas Taco Filling

Ingredients

  • 2 lbs. pork shoulder, cubed
  • 1 garlic clove
  • 1/2 orange
  • 1/2 lime
  • 4 thyme sprigs
  • 2 bay leaves
  • 1 cup milk
  • 1 tsp kosher salt
  • 1 onion, sliced

Directions

  1. Combine pork, garlic, orange, lime, thyme, bay leaves, milk and salt in a large pot; add enough water to cover the pork. Cook over medium heat until the liquid evaporates and the pork browns, about 1 hour. Remove the pork; add onion to the pot and cook until browned. Serve the pork and onion in toasted tortillas with toppings.
