Ingredients

  • For the Vinaigrette:
  • 1 shallot, chopped
  • 2 tbsp. red wine vinegar
  • 1 tbsp. fresh lemon juice
  • 2 tsp Dijon
  • 6 tbsp. olive oil
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • For the Salad:
  • 1 large head of romaine
  • 2 carrots, cut into sticks
  • 1/2 English cucumber, cut into spears
  • 1 red bell pepper, cut into strips

Directions

  1. For the vinaigrette, in a small bowl, whisk together the shallots, vinegar, lemon juice, mustard, oil, salt and pepper.

  2. For the salad, slice the head of the romaine lengthwise down the middle, keeping the core intact. Then cut the lettuce crosswise into bite-size pieces. Discard the core.

  3. In a large bowl, toss the lettuce with as much vinaigrette as you like. Divide among bowls, with the vegetables.
