Flax Crackers with Lemony Hummus

Ingredients

  • 1/4 cup golden flaxseeds
  • 1/4 cup brown flaxseeds
  • 1/4 cup hulled hempseed hearts
  • 2 tbsp. sesame seeds
  • 2 tbsp. tomato paste
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/4 tsp chipotle powder
  • 1/4 tsp kosher salt
  • 1 tsp olive oil
  • Lemony Hummus (see recipe)

Directions

  1. Preheat the oven to 250. Line an 18×13-inch rimmed sheet pan with parchment paper.

  2. In a medium bowl, combine the flaxseeds with 1/2 cup water. Let stand for 15 minutes, or until the seeds absorb all of the water and become gelatinous. Add the hemp seeds and sesame seeds to the flax and stir to combine.

  3. In a small bowl, combine the tomato paste, cumin, chili powder, chipotle powder, salt and oil. Add to the seed mixture and stir to coat evenly.

  4. Pour the mixture onto the prepared pan. Using the back of a spoon or a small offset metal spatula, spread the mixture out as thinly and as evenly as you can.

  5. Bake for 1 1/2 to 2 hours, until the cracker is crisp. Let cool completely. Break up into small crackers and serve with Lemony Hummus.
