Baked Apples

Ingredients

  • 1/2 cup chopped walnuts
  • 2 tbsp. rolled oats
  • 2 tbsp. unsweetened shredded coconut
  • 2 tbsp. olive oil
  • 2 tbsp. honey
  • 1/2 tsp ground cinnamon
  • 1/4 tsp grated nutmeg
  • 4 apples, such as Pink Lady, McIntosh, or Empire

Directions

  1. Preheat the oven to 375.

  2. In a small bowl, combine the walnuts, oats, coconut oil, 1 tbsp. of the honey and the cinnamon and nutmeg.

  3. Cut out the tops of the apples, then use a melon baller or spoon to scoop out the core. Fill each apple with the walnut mixture and put in a baking dish. Bake for 30 to 40 minutes, until the apples are soft and start to puff up.

  4. Drizzle with the remaining 1 tbsp. honey before serving.
