Jalapeno Corn Bread

Ingredients

  • 1/4 cup unsalted butter
  • 1 1/4 cups all-purpose flour
  • 1 cup yellow cornmeal
  • 1/3 cup sugar
  • 1 1/2 tsp baking soda
  • 3/4 tsp kosher salt
  • 2 large eggs
  • 1 1/2 cups buttermilk
  • 1 jalapeno, seeded and chopped

Directions

  1. Preheat the oven to 425.

  2. Put the butter in a 10-inch cast iron skillet. Place in the oven for a few minutes until the butter melts.

  3. Meanwhile, in a large bowl, whisk together the flour, cornmeal, sugar, baking soda and salt. In a medium bowl, whisk together the eggs and buttermilk.

  4. Swirl the hot skillet to coat the bottom and sides with the butter, then pour into the buttermilk mixture and whisk. Add the wet ingredients to the dry ingredients and whisk until just combined. Stir in the jalapeno.

  5. Scrape the batter into the hot pan and bake for 18-20 minutes, until a toothpick inserted into the center comes out clean. Serve warm.
