Sweet and Sticky Pork Ribs

Ingredients

  • 1/2 cup soy sauce
  • 1/4 cup apricot jam or preserves
  • 1/4 cup dark brown sugar
  • 2 tbsp. Sriracha
  • 1 tbsp. rice vinegar
  • 2 tbsp. grated fresh ginger
  • 4 garlic cloves, smashed and peeled
  • 2 racks baby back ribs, cut into individual ribs

Directions

  1. In a small bowl, combine the soy sauce, jam, brown sugar, Sriracha, vinegar, ginger, and garlic.

  2. Put the ribs in a large Ziploc bag. Add the soy sauce marinade, squeeze out the air and tightly seal. Let marinate in the fridge for at least 1 hour or overnight.

  3. Preheat the oven to 350.

  4. Arrange the ribs in a single layer on a rimmed sheet pan. Pour in the marinade. Cover the pan lightly with foil and bake for 1 hour. Remove the foil and raise the oven temp to 450. Roast for 20-30 minutes more, basting and stirring the ribs 2 or 3 times, until the marinade becomes sticky and clings to the ribs.
