Salad with Crispy Prosciutto and Fresh Mozzarella

Ingredients

  • 1/4 lb. thinly sliced prosciutto
  • 8 cups salad greens
  • 8 oz. fresh mozzarella, cut into bite-size pieces
  • 1/4 cup fresh parsley leaves
  • 2 tbsp. olive oil
  • 2 tbsp. balsamic vinegar
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper

Directions

  1. Preheat the oven to 400.

  2. Place the prosciutto in a single layer on a rimmed sheet pan. Bake for 10-15 minutes, until crisp.

  3. Put the salad greens in a large serving bowl and arrange the mozzarella on top. Scatter the prosciutto chips and parsley over the salad. Drizzle with the oil and vinegar and sprinkle with the salt and pepper.
