Simple Sour Cream Biscuits

Ingredients

  • 2 cups flour, plus more for dusting
  • 1 tbsp. baking powder
  • 1 1/4 tsp baking soda
  • 1 tsp sea salt
  • 1 stick butter, very cold
  • 3/4 cup sour cream

Directions

  1. In a large bowl, whisk 2 cups flour, the baking powder, baking soda and salt. Turn the stick of butter in the dry ingredients until coated. Using the large holes on a box grater, grate the butter into the bowl. Using your fingertips, evenly mix in the butter. Form a well in the dry ingredients.

  2. In a small bowl, whisk the sour cream and 1/3 cup very cold water. Pour into the dry ingredients and stir just until blended. Cover and refrigerate for at least 20 minutes or up to 4 hours.

  3. Position a rack in the center of the oven; preheat to 450. Grease a large baking sheet. Transfer the dough to a floured work surface and pat into a circle about 1 inch thick, dusting with more flour if the dough is sticky. Using a 2-inch cutter, cut out biscuits, pressing straight down into the dough. Transfer to the sheet. Gather the dough and repeat patting and cutting until the dough is used up.

  4. Bake until the biscuits are golden and crispy on top, 12-15 minutes. Let cool for 5 minutes.

  5. Jalapeno Cheddar:

  6. Add 1 1/4 cups grated extra-sharp cheddar, 1/2 cup chopped well-drained roasted red pepper from a jar, 1/2 cup finely ground cornmeal, and 1 1/2 tbsp. finely chopped jalapeno to dry ingredients.

  7. Arrange thinly sliced jalapenos on top before baking.

  8. In a mini food processor, puree 6 tbsp. butter (at room temp) and 1/4 cup finely chopped well-drained roasted red pepper from a jar; season.

  9. Everything Bagel:

  10. Add 1 cup finely chopped onion, 2/3 cup flour, 2 tbsp. finely chopped garlic and 1 tbsp. caraway seeds to the dry ingredients.

  11. In a bowl, mix 1 tbsp. finely chopped garlic, 1 1/2 tsp each caraway seeds, poppy seeds and sesame seeds, and 1 tsp kosher salt. Sprinkle on top before baking.

  12. In a bowl, whisk 6 tbsp. butter (at room temp) and 2 tbsp. chopped fresh dill; season.

  13. Pepperoni:

  14. Add 1 1/2 cups grated mozzarella, 1 1/2 cups chopped sliced pepperoni, 1/2 cup grated Parmesan, and 2 tbsp. chopped fresh marjoram leaves to the dry ingredients.

  15. Arrange 1/2 cup chopped sliced pepperoni and 1 tbsp. grated Parmesan on top before baking.

  16. In a bowl, whisk 6 tbsp. butter (at room temp), 3 tbsp. honey and 1 tsp crushed red pepper; season.

  17. Shoo Fly:

  18. Whisk 1/4 cup molasses into the sour cream.

  19. In a bowl, mix 3 tbsp. chopped pecans and 1 1/2 tbsp. brown sugar. Sprinkle on top before baking.

  20. In a bowl, whisk 6 tbsp. butter (at room temp) and 3 tbsp. molasses; season.
