Pumpkin Hushpuppies

Ingredients

  • 1 cup cornmeal
  • 3/4 cup flour
  • 2 tbsp. sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3/4 tsp kosher salt
  • 1/2 tsp chipotle chile powder
  • 1 cup buttermilk
  • 3/4 cup pure pumpkin puree
  • 1 egg, beaten
  • Vegetable oil, for frying
  • Salt

Directions

  1. Whisk cornmeal with flour, sugar, baking powder, baking soda, kosher salt and chile powder in a large bowl. Add buttermilk, pumpkin puree and egg and whisk until smooth. Working in batches, deep-fry scoops of batter (2 tbsp. each) in 375 degree oil until puffed and golden, about 4 minutes. Drain on paper towels. Season with salt.
