Mushroom Cups

Ingredients

  • 1 cup chopped onions
  • 3 Tbsp margarine
  • 2 egg yolks
  • 1/2 cup grated parmesan cheese
  • 8 slices white bread
  • 2 cups finely chopped mushrooms
  • 1/2 cup chopped parsley, fresh is best
  • 3/4 cup grated mozzarella cheese
  • 1 tsp salt
  • 1/2 cup melted butter

Directions

  1. Sautee onions and mushrooms in margarine. Remove from heat.

  2. Add parsley, eggs, cheeses, and seasonings. Combine well.

  3. Trim crusts from bread and cut into 4 equal squares. Roll or press pieces flat. Melt a small portion of the butter in a small bowl. Dip one backside of a piece of the bread in the butter and immediately press into form in a miniature muffin tin.

  4. Repeat for remaining bread pieces, melting additional butter as needed (do not melt all at once, or you will sog your bread when you dip it and it will fall apart and not bake properly!).

  5. Fill each bread square in the mold with mushroom-cheese mixture.

  6. Bake in 350 oven for 20-25 minutes.
