Chocolate Overload Cookie Bars

  • 1 1/3 cups all-purpose (plain) flour
  • 1/4 cup unsweetened cocoa powder
  • 3/4 cup granulated sugar
  • 3/4 cup (1 1/2 sticks) butter or hard margarine, softened
  • 2 packages (8 ounces/250 grams each) block cream cheese, softened
  • 1 cup mayonnaise
  • 1 cup granulated (white) sugar
  • 4 large eggs
  • 2 cups semi-sweet chocolate chips, melted
  • 2 teaspoons vanilla extract


  1. CRUST: Preheat oven to 350◦F. Grease a 9×13 inch pan.

  2. In a large bowl, mix the flour, cocoa, and sugar. Cut in the butter until well blended. Spread mixture into bottom of prepared pan and bake for 15 minutes. (This can also be done in a food processor using a steel blade).

  3. FILLING: In a large bowl, beat the cream cheese and mayonnaise (this can be done by hand, but is easier with an electric mixer). Gradually add the sugar. Add the eggs, one at a time, beating well after each addition. Gradually add the melted chocolate, then the vanilla. Pour this over the crust (it does not have to be cooled). Bake for 35 minutes. Let cool to room temperature and then refrigerate for at least 4 hours.
