Farmer’s casserole (Christmas breakfast)

Serves 6 people

Ingredients

  • 3 cups frozen hash browns
  • 3/4 cup shredded Monterey Jack
  • 4 oz diced chiles or jalapeƱos
  • 1 cup diced ham, Canadian bacon, or turkey sausage
  • 1/4 cup green onion, sliced
  • 4 beaten eggs
  • 1 12oz can evaporated milk
  • salt and pepper

Directions

  1. Grease a 2 quart square baking dish. Arrange potatoes evenly in the bottom of the dish. Sprinkle with cheese, meat and green onion.

  2. In a medium mixing bowl, combine eggs, milk, chiles, salt and pepper. Pour egg mixture over potato mixture in dish. (At this point, the dish may be covered and refrigerated overnight night.) Bake uncovered in a preheated 350 degree oven for 40-45 minutes (or 55-60 min if made ahead and chilled). Let stand 5 min before serving.
