Crockpot Salsa Chicken

Cook time: 260 minutes
Serves 5 people


  • 1 pkg skinless, boneless chicken thighs
  • 1 packet taco seasoning
  • 1 can drained black beans
  • 1 cup salsa
  • 1/2-1 cup sour cream
  • 1/2 cup shredded cheese
  • 1-2 cups frozen corn (thawed)


  1. Rub chicken thighs with taco seasoning and place in crock pot. Pour beans and salsa over. Cook on low 4-6 hours. Add corn, cheese, sour cream and cook uncovered for 10-15 minutes. Garnish with lime/cilantro and serve over rice.
