Ruggles (Peanut Butter Chocolate Chip Cookies)

Serves 48 people


  • 1/2 cup butter, softened
  • 3/4 cup brown sugar
  • 3/4 cup white sugar
  • 3/4 cup peanut butter
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup rolled oats
  • 1 cup semisweet chocolate chips


  1. Preheat oven to 375F.

  2. In a large bowl, cream together the butter, sugars, and PB until smooth. Beat in the egg and vanilla.

  3. Combine flour, baking soda and salt. Stir into the PB mixture in intervals until well combined. Lastly, stir in the oats and chocolate chips. Drop by rounded spoonfuls onto ungreased cookie sheets.

  4. Bake for 8 min or until edges are golden. Remove from cookie sheets to cool on wire racks.
