Homemade Stuffing

  • 3-4 cups bread crumbs or chunks (consider using a crusty boule or baguette for variety in texture).
  • 3/4-1 cup finely chopped onion
  • 3/4-1 cup finely chopped celery
  • 1/4-1/2 cup butter
  • 1/2 cup chopped parsley
  • 1 tsp dried thyme
  • salt & pepper
  • 1 tsp chopped fresh rosemary
  • Consider sliced almonds and dried cranberries


  1. Buzz bread chunks in the food processor and place in a large bowl.

  2. Saute onion and celery in butter until tender and add to bread crumbs. Add parsley, thyme, salt and pepper. Add rosemary, almonds or cranberries if desired.

  3. Mix well with hands. If dry, add a bit of chicken stock. Put in buttered pan, dot top with butter and bake in 325F over for 45-60 min.
