Cast iron cornbread

Ingredients

  • 1/2 C melted butter
  • 1 C cornmeal
  • 1/2 t salt
  • 1 pinch cayenne pepper
  • 3 T honey, or to taste
  • 2 large eggs
  • 1 1/2 C buttermilk
  • 1 C self-rising flour

Directions

  1. Preheat oven 400

  2. Melt butter in skillet-set aside

  3. Combine cornmeal, salt, cayenne, honey, eggs and buttermilk. whisk together

  4. Add flour and 1/2 butter from pan.

  5. Whisk again

  6. Pour batter into remaining butter in skillet

  7. Bake about 25 minutes or until toothpick is clean
