Overnight Waffles with Mixed Berry Compote

Ingredients

  • 3 cups flour
  • 1 1/2 cups milk, at room temp
  • 3 large eggs, beaten
  • 1/2 cup buttermilk
  • 1/2 cup butter, melted
  • 1/4 cup pure maple syrup
  • 1 1/2 tsp pure vanilla extract
  • 1 1/2 tsp salt
  • 1 envelope active dry yeast
  • 1 bag frozen mixed berries

Directions

  1. In a large bowl, stir first 9 ingredients just until blended. Cover with plastic wrap; let stand for 30 minutes. Chill batter overnight. Preheat waffle iron. In a medium saucepan, heat berries over medium, breaking them up slightly with spoon, until heated through, 5-10 minutes. Cover berries to keep warm. Cook wafflers in waffle iron as directed, 3-4 minutes per batch. Top waffles with berries.
