’Nduja Grilled Cheese

Ingredients

  • 3 cups baby arugula
  • 1 tbsp. olive oil
  • 2 tsp balsamic vinegar
  • 4 tbsp. 'nduja (spreadable spicy salami)
  • 8 slices sourdough bread
  • 8 oz. fresh mozzarella, cut into 16 slices

Directions

  1. In a medium bowl, toss arugula, olive oil, and vinegar; season. Spread 1 tbsp. ’nduja on 1 slice of bread. Layer 4 slices of cheese on another slice of bread. In large skillet, cook bread slices, covered, over medium-high heat until cheese melts, 1 1/2 minutes. Top ’nduja toast with 3/4 cup arugula. Sandwich with cheese toast. Repeat with remaining ingredients.
