Grilled corn

Serves 4 people

Ingredients

  • 4 large ears corn in the husk
  • olive oil
  • flavored butters (see other recipes)

Directions

  1. Preheat grill to med.

  2. Pull back corn husks but do not remove. Remove corn silk. Soak corn in cold water 10 minutes while grill is heating. Remove corn, pat dry. Lightly brush kernels with olive oil. Pull husks up to cover corn kernels. If necessary, tie each ear with twine to hold husks in place.

  3. Place corn on grill over direct heat. Cook 2 minutes, turn. Repeat 2 or 3 more times until husks are lightly charred. Remove corn from direct heat to outer edges of grill. Grill until corn is tender, about 10 to 15 minutes more.

  4. Using oven mitts to protect from steam, pull back husks and spread with flavored butter of your choice.
