Baked Beans + Cheese Toasted Sandwich

Something you can easily throw together.

Could either be made as a snack or a meal.

The challenge to this is getting the timing right; you may want to keep the beans on a gentle heat while you toast each sandwich, if your grill is too small to do all at once.

The beans can also be substituted for beans and sausage, tinned spaghetti, or whatever you feel like trying!

Cook time: 15 minutes
Serves 2 people

Ingredients

  • 1 large tin of baked beans
  • 8 thick slices of bread
  • cheddar cheese
  • butter

Directions

  1. Prepare by cutting slices of the cheese to your liking – two or three per sandwich works well.

  2. Cook the baked beans, preferably on a hob, as this will give you more time than using the microwave.

  3. While the beans are cooking, very lightly toast one side of each of the slices of bread in a grill.

  4. (Optional) Butter the soft side of each slice of bread to your liking.

  5. Once the beans are cooked, pour about a quarter tin onto the soft side of a slice of bread. Add cheese, and place a second slice of bread on top. Hold together with cocktail sticks if necessary.

  6. Repeat this with the rest of the beans and cheese – using this recipe you should be able to make four sandwiches.

  7. Once each sandwich is made, quickly place under the grill once more, and toast either side until the bread is golden and the cheese has melted.

  8. Serve immediately, with any additional toppings.
