Orange-Ginger Meatball Stir-Fry

Ingredients

  • 1 lb. ground beef
  • 2 tbsp. chopped fresh cilantro
  • 1 garlic clove, minced
  • 1 1/4 tsp kosher salt, divided
  • 1/2 tsp ground ginger
  • 1 tbsp. vegetable oil
  • 1 cup thinly sliced red onion
  • 16 oz. package fresh vegetable stir-fry mix, sauce packet reserved for another use
  • 1/3 cup orange marmalade
  • 1 tbsp. fresh lime juice
  • 1 tsp sesame oil
  • Hot cooked rice, to serve
  • Garnish: fresh cilantro, lime wedges

Directions

  1. In a medium bowl, stir together beef, cilantro, garlic, 3/4 tsp salt, and ginger. Roll mixture into 1-tbsp. meatballs.

  2. In a large skillet, heat oil over medium-high heat. Add meatballs; cook until browned on both sides and cooked through, 8-10 minutes. Remove using a slotted spoon, and let drain on paper towels.

  3. Add onion, stir-fry mix, and remaining 1/2 tsp salt to skillet. Cook over medium-high heat, stirring frequently, until crisp-tender, 3-4 minutes. Return meatballs to skillet.

  4. In a small bowl, stir together marmalade, lime juice, and sesame oil; add to skillet. Cook, stirring constantly, until meatballs are heated through, about 2 minutes. Serve immediately over rice. Garnish with cilantro and lime.
