Garlic-Rosemary Skillet Steaks

Ingredients

  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 2 New York strip steaks, room temp
  • 2 tbsp. canola oil
  • 1/3 cup unsalted butter, cubed
  • 3 large garlic cloves
  • 1 tbsp. minced garlic
  • 1 tbsp. chopped fresh rosemary
  • Garnish: fresh rosemary sprigs

Directions

  1. Sprinkle salt and pepper all over steaks.

  2. In a 12-inch cast-iron skillet, heat oil over medium-high heat. Add steaks; cook until deep golden brown on bottom, about 3 minutes. Turn steaks, and cook until browned on bottom, about 3 minutes.

  3. Reduce heat to low; move steaks to one side of pan. Add butter, garlic cloves, minced garlic and chopped rosemary to opposite side of pan; cook until butter is melted and garlic is lightly browned, about 1 minute. Remove skillet from heat, and spoon butter mixture onto steaks. Let steaks stand for 5 minutes before serving. Garnish with rosemary.
