Cheesecake

Ingredients

  • 1 package Nabisco Social Tea Biscuits
  • 1/2 stick unsalted butter, softened
  • 4 eggs, separated
  • 1 cup sugar
  • 12 oz. cream cheese, softened
  • 3/4 cup sour cream
  • 1 tsp. vanilla extract
  • 1 tsp. lemlon extract
  • 2 tbs. cake flour (not self rising)

Directions

  1. Preheat oven to 300 degrees.

  2. In food processor fitted with the steel blade, process the cookies until finely ground. Transfer to a small bowl and work the butter into the cookie crumbs.

  3. Press the crumbs into an ungreased 8 or 9 inch springform pan.

  4. Separate the eggs.

  5. In the bowl of an electric mixer, beat the egg yolks with the sugar.

  6. Add the cream cheese, sour cream and extracts.

  7. Add the flour and beat well.

  8. In another bowl, beat the egg whites until stiff but not dry. Fold into the cream cheese mixture.

  9. Pour the mixture into the springform pan.

  10. Bake for one hour. Turn off the oven and let the cake rest for one hour more.

  11. Remove from the oven and when completely cool, remove from the pan.

  12. Serve at room temperature.

  13. Best when served the same day as baked.
