Applesauce Panckes

Ingredients

  • 4 eggs
  • 2/3 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 2/3 cup tapioca flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/8 tsp salt
  • 1/3 cup water, or as needed
  • 1 tsp coconut oil or cooking spray
  • 1 cup thinly sliced apple
  • Honey

Directions

  1. Whisk together eggs, applesauce, and vanilla in a large bowl.

  2. In another bowl, stir together both flours, baking soda, cinnamon and salt. Add flour mixture to egg mixture and stir until just combined. Stir in water until batter is desired thickness. Let batter rest 15 minutes.

  3. Melt coconut oil on a griddle over medium heat. (Or coat griddle with cooking spray and heat over medium heat.) Working in batches, add 2-tbsp portions of batter to griddle. Top with apple slices. Cook until bubbles form and edges are dry, 2 to 3 minutes. Flip and cook until bottoms are browned, about 2 minutes more. Repeat with remaining batter. Top with apple slices and honey.
