Apricot short ribs

Ingredients

  • 3 pounds beef short ribs
  • 1/4 cup chopped onion
  • 3 cloves garlic, minced
  • 1tbs oil
  • 1/2 cup ketchup
  • 1/2 cup apricot preserves
  • 1/4 cup cider vinegar
  • 1 mild to hot pepper, seeded and finely chopped
  • 1 tbs steak sauce
  • 1 tsp chili powder
  • 1/1 tsp cumin
  • 1/4 tsp salt

Directions

  1. Place ribs in pot with wenough water tocover and bring to boiling. Simmer covered for 1 1/1hours. Drain.. For sauce, cook onion and garlicin hot oil until tender. Stir in ketchup, apricot preserves, vinegar, pepper, steak sauce and chili powder. Bring to boiling thenm simmer about 10 minutes. Set aside. Stir together salt and cumin and sprinkle mixture over both sides of ribs. Rub in. Grill over indirect heat, meaty side up. Cover and grill for 15 minutes. brushing with sauce.
