Crock pot baked beans

Ingredients

  • 1 1/2 lbs dried navy beans, rinsed and soaked overnight
  • 1 lb smoked bacon, chopped
  • 1/2 cup maple syrup
  • 1/2 cup molasses
  • 1 tbs ground pepper
  • 3 tbs dijon mustard1 cup ketchuyp
  • 3 tbs tomato paste
  • 3 tbs brown sugar
  • 1 tbs tabasco
  • 1/2 cuporange juice, divided
  • 1/2 cup pineapple juice, divided
  • 1/2 cup black coffee, divided
  • 1 cup chicken stock, divided

Directions

  1. Drain and rinse soaked beans then place in pan with enough fresh water to cover. Cook, covere for 1 hour or until tender. Saute baconuntil lightly browned. remove and set aside. Saute onions in bacon fat until translucent. Remolve and set aside. In a saucepan combine maple syrup, m olasses, pepper, mustrd, ketchup, tomato paste, brown sugar, tabasco, orange and pineapple juices,coffee and stock. Cook over med heat for 1 hour. Combine beans, sauce, onions and bacon in crock p[ot. There should be enough liquid to cover the beans generously. Cookl on high for 8 hours.
