General Tso’s Glaze

Ingredients

  • 1/4 cup rice vinegar
  • 1/4 cup water
  • 3 tbsp. soy sauce
  • 3 tbsp. granulated sugar
  • 3 tbsp. dark brown sugar
  • 3 tbsp. ketchup
  • 1/2 tsp sesame oil
  • 10 dried arbol chiles
  • 1 tbsp. chopped ginger
  • 1 tbsp. chopped garlic
  • Vegetable oil
  • 2 tsp cornstarch
  • 1 tbsp. water
  • Sliced scallions

Directions

  1. Whisk rice vinegar and water with soy sauce, sugars, ketchup, and sesame oil; set aside. Saute chiles, ginger and garlic in vegetable oil in a saucepan over medium-high heat, 1-2 minutes. Add the vinegar mixture and bring to a boil. Add cornstarch mixed with water. Simmer until thickened, 20-30 seconds. Toss with the wings. Top with the sliced scallions.
