Quick-Pickled Red Cabbage

Ingredients

  • 1 lb. red cabbage, finely shredded (1/2 head)
  • 1/2 cup spiced cane or coconut vinegar
  • 1 tbsp. sugar
  • 2 tsp whole coriander seeds
  • 1 1/2 tsp black pepper
  • 1 tsp kosher salt
  • 1 to 2 fresh Thai chiles

Directions

  1. Toss cabbage with vinegar, sugar, coriander, pepper and salt in a large bowl. With clean hands, massage spices into cabbage. Adjust seasoning as desired with additional sugar or salt. It should still have a sour flavor, but you shouldn’t be wincing. Stir in Thai chiles. Cover and chill at least 30 minutes and up to 3 days.
