Meyer Lemon Muffins

Ingredients

  • 2 cups flour
  • 1 cup plus 2 tbs sugar divided
  • 1 tsp baking soda
  • 1tspsalt
  • 3 meyer lemons, divided
  • 2 eggs
  • 1 cup milk
  • 12 cup butter melted
  • 1/2 tsp cinamon

Directions

  1. Heat oven to 400 degs. Combine flour, 1 cup sugar, baking soda and salt in large bowl. Set aside.

  2. Cut 2 lemons into 1 inch pieces. Put in blender and chop until finely chopped. In small bowl, lightly beat eggs. Add milk, butter and chopped lemon. Stir.

  3. Make well in center of dry ingredients and pour in the lemon mixture. Stir just until all ingredients are moistened.

  4. Spoon batter intobuttered cups of muffin pan , filling each half full.

  5. Combine remaoining sugar with cinnamon. Sprinkle 1/4 tsp over each mujffin. Cut remaing lemon into 9 paper thin slices. Cut each slice in half andtop each muffin with 12 slice..

  6. Bake about 20 minutres.
