Italian Beef Vegetable Soup

Ingredients

  • 1/2 lb. ground beef
  • 1/4 cup chopped onion
  • 2 cups chopped cabbage
  • 2 medium carrots, chopped
  • 1 cup fresh Brussels sprouts, quartered
  • 1 cup chopped fresh kale
  • 1 celery rib, chopped
  • 1 tbsp. minced fresh parsley
  • 1/2 tsp pepper
  • 1/2 tsp dried basil
  • 1/4 tsp salt
  • 3 cups beef stock
  • 14.5 oz. Italian diced tomatoes, undrained

Directions

  1. In a skillet, cook and crumble ground beef with onion over medium-high heat until meat is browned, 4-5 minutes. Transfer beef mixture to a slow cooker. Stir in remaining ingredients.

  2. Cook, covered, on LOW until the carrots are tender, 5-6 hours.
