Jalapeno Cheese Corn Bread

Ingredients

  • 1 cup yellow corn meal
  • 1 cup flour
  • 1/3 cup sugar
  • 1 tbs baking powder
  • 1/2 tsp salt
  • 1 cup whole milk
  • 2 eggs lightly beaten
  • 3 tbs oil
  • 1 11 0z can corn kernels, drained
  • 1 cup shredded monterey jack
  • 3 tbs chopped pickled jalapenos

Directions

  1. eheat oven to 375. Lightly grease 8 inch square bakeing pan.

  2. Combine corn meal, flour, sugar,baking powder and salt in large mixing bowl.

  3. In separate bowl, whisk together milk, eggs and oil. Fold liquid into dry ingredients until batter is formed. Fold in corn, cheese and jalapenos. Pour batter into baking pan. Bake 20 to 25 minutes.
