Patatas Bravas

Ingredients

  • 3 russet potatoes (cut into 1-inch chunks)
  • Salt
  • Vegetable oil, for frying
  • Salt
  • Smoked paprika
  • Saffron Aioli (see recipe)

Directions

  1. Put potatoes in a large pot; cover with water by 1 inch and season with salt. Bring to a boil, then simmer until tender, 12-15 minutes.

  2. Drain on a kitchen towel-lined baking sheet; let cool.

  3. Working in 2 batches, fry the potatoes in 365 degree vegetable oil until crisp, 3-4 minutes. Drain on paper towels.

  4. Sprinkle with salt and smoked paprika and drizzle with saffron aioli.
