Saffron Aioli

Ingredients

  • Pinch of saffron
  • 3 tbsp. hot water
  • 2 pasteurized egg yolks
  • 2 garlic cloves, minced
  • 2 tbsp. lemon juice
  • 1/2 tsp Dijon
  • Pinch of salt
  • 1/2 cup vegetable oil
  • 1/2 cup olive oil
  • Salt

Directions

  1. Soak a large pinch of saffron in hot water, 10 minutes. Puree in a blender with egg yolks, garlic, lemon juice, Dijon and a pinch of salt.

  2. With the blender of high speed, slowly add vegetable and olive oils and blend until thicken and smooth, adding a few drops of water if needed; season with salt. Drizzle over the potatoes.
