Lima Bean-Tahini Dip

Ingredients

  • 2 cups frozen baby lime beans
  • 1 cup water
  • 4 cups baby spinach
  • 1/2 cup tahini
  • 1/2 cup fresh cilantro
  • 1/2 cup water
  • 1/4 cup fresh dill
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 tsp lemon zest
  • 1 garlic clove, grated
  • Salt and pepper
  • Drizzle of olive oil
  • Crumbled feta
  • Chopped dill
  • Crudites, for serving

Directions

  1. Cook lime beans in 1 cup simmering water in a saucepan over medium-high heat until softened, 8 minutes. Stir in baby spinach until wilted.

  2. Transfer the vegetables and liquid to a food processor along with tahini, cilantro, water, dill, olive oil, lemon juice, lemon zest and garlic; season with salt and pepper. Puree, adding more water if needed.

  3. Top with a drizzle of olive oil, crumbled feta and chopped dill. Serve with crudites.
