Harissa Carrots and Cauliflower

Ingredients

  • 1 lb. carrots (cut into 3-inch sticks)
  • 4 cups cauliflower florets
  • 3 tbsp. olive oil
  • Salt and pepper
  • 2 garlic cloves, chopped
  • 2 tbsp. olive oil
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cumin
  • 2 tbsp. lemon juice
  • 2 tsp harissa
  • Salt

Directions

  1. Toss carrots and cauliflower with olive oil on a baking sheet; season with salt and pepper. Broil until tender and charred, 13-15 minutes.

  2. Saute garlic in olive oil in a skillet over medium heat, 1 minute. Stir in ground coriander and cumin.

  3. Remove from the heat and stir in lemon juice and harissa; toss with the vegetables. Season with salt.
