Cajun egg casserolle

Ingredients

  • 2 cups croutons
  • 1 cup shredded jack
  • 4 eggs
  • 2 cups milk
  • 1tsp yellow mustard
  • dash pepper
  • cajun sauce

Directions

  1. eheat oven to 325. Grease 2qt square baking dish and combine croutonsand cheese. set aside.

  2. In medium bowl, whisk together eggs, milk , mustared and pepper. Pour mixture over croutons and cheese in baking dish.

  3. Bake in oven about 40 minutes.

  4. Meanwhile prepare cajun sauce as follows. In medium sauce pan combine 1 14 1/2 oz can diced tomatoes with green pepper and onion undrained. 1 tsp sugar and dash black pepper. Bring to boiling and simmer uncovered about 10 minutes. Stir in 1/4 cup sliced pimento stuffed green olives. Heat through.
