Cream of Asparagus Soup

  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp fresh thyme
  • 2 tbsp. butter
  • 2 lbs. asparagus, trimmed and chopped
  • 1 1/2 cups water
  • 1 1/2 cups chicken broth
  • Big pinch of salt
  • 1/2 cup crème fraiche
  • Salt and pepper
  • Chopped chives


  1. Saute onion, garlic, and thyme in butter in a large pot over medium-high heat until softened, about 5 minutes. Add asparagus, water and chicken broth and salt. Simmer until tender, 5 to 8 minutes. Puree with an immersion blender. Whisk in crème fraiche and warm through (do not boil). Season with salt and pepper. Top with more crème fraiche and chopped chives.
