Peanut Butter Cupcakes

Ingredients

  • 1 1/2 cups cake flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup packed dark brown sugar
  • 1/2 cup creamy peanut butter, at room temp
  • 3 tbsp. applesauce
  • 3 tbsp. vegetable oil
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 cup buttermilk
  • Banana Butter Frosting (see recipe)
  • Sweetened banana chips, for garnish

Directions

  1. Preheat oven to 350. Line twenty-four 2 1/2-inch muffin cups with paper liners.

  2. Stir together flour, baking powder, baking soda, and salt in a small bowl.

  3. In a large bowl, beat together brown sugar, peanut butter, applesauce, oil and vanilla with an electric mixer until smooth and well combined. Add eggs, 1 at a time, beating after each addition until combined. Beat in flour mixture, alternating with buttermilk, on low speed until just combined.

  4. Fill prepared muffin cups two-thirds full. Bake until a toothpick inserted in centers comes out clean, 14 to 16 minutes. Let cupcakes cool in muffin cup 5 minutes. Using a knife, loosen edges; carefully remove cupcakes and transfer to a wire rack to cool completely. Frost with Banana Butter Frosting, then garnish with banana chips.
