Seahawk Burger

Ingredients

  • 4 slices sweet onion
  • 1 tsp vegetable oil
  • 4 ground beef patties
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 4 slices Monterey Jack cheese
  • 1/2 cup mayo
  • 1 tbsp. brewed espresso
  • 1 tsp Sriracha
  • 4 Kaiser or sesame seed buns, toasted
  • Arugula or iceberg lettuce and tomato slices

Directions

  1. Heat a grill pan over medium-high heat or an outdoor grill to medium-high heat. Brush onion slices with oil, then transfer to grill pan; grill, turning once, until golden brown, about 10 minutes. Set aside.

  2. Sprinkle beef patties with salt and pepper. Transfer to pan; grill 7 to 9 minutes per side. Add cheese, cover, and grill until cheese is melted, about 1 minute more.

  3. Whisk together mayo, espresso and Sriracha in a bowl until smooth; spread on buns. Top with patties and onion. Add arugula and tomato and bun tops.
