Sweet and Savory Pineapple Pork Loin

Ingredients

  • 2 tbsp. honey
  • 1 tbsp. Dijon
  • 1/2 tsp black pepper
  • 3 lb. boneless pork top loin roast
  • 8 oz. can pineapple chunks packed in 100% juice, drained
  • 1/4 tsp salt

Directions

  1. Preheat oven to 375.

  2. Stir together honey, Dijon, and pepper in a bowl to make a paste.

  3. Heat a cast-iron skillet over medium-high heat. Add pork; sear on all sides, about 5 minutes. Transfer pork to a 9×13-inch baking dish. Spread paste on all sides of pork. Surround pork with pineapple and sprinkle with salt.

  4. Roast, covered, 1 hour or until cooked through.

  5. Transfer pork to a cutting board and let rest 10 minutes. Transfer pineapple and drippings to a blender, adding 1 to 2 tbsp. water if necessary; blend until smooth. Slice pork and serve with pineapple sauce.
