Walnut Balls

Ingredients

  • 1 1/2 cups ground Walnuts
  • 4 oz grated mild Cheddar
  • 1/2 cup breadcrumbs
  • 1/2 cup wheat germ
  • 1/2 onion, minced or grated
  • 3/4 cup milk
  • 2 tbsp. parsley
  • Salt and pepper to taste
  • 3 cups Bechamel
  • 2 eggs, beaten

Directions

  1. In a large bowl mix together the walnuts, cheese, breadcrumbs, wheat germ, onion and milk. Season with parsley, pepper and salt taste.

  2. Add in well beaten eggs Roll into balls, slightly smaller than egg-size and arrange them in a buttered baking dish. Pour Bechamel over

  3. and bake 375-400 35-40 minutes. Should make about 20 balls.

  4. Bechamel:

  6. 3 tbsp butter

  7. 3 tbsp flour

  8. 1/2 onion minced

  9. 2 1/2 cups hot milk

  10. peppercorns

  11. thyme

  12. small bayleaf

  13. salt

  14. grated nutmeg

  15. Heat butter, add onion 3-4 minutes, add flour, cook a few minutes more. Slowly add hot milt bit by bit with a whisk.

  16. It will begin to thicken. Add a few peppercorns, thyme, bay leaf, salt to taste and nutmeg
