Dr. Pepper Sheet Cake

Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 2 cups Dr. Pepper
  • 1 cup butter, cubed
  • 1/4 cup baking cocoa
  • 2 large eggs, room temp, lightly beaten
  • Icing:
  • 1/2 cup butter, cubed
  • 1/3 cup Dr. Pepper
  • 1/4 cup baking cocoa
  • 3 3/4 cups confectioners' sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 cup chopped pecans, toasted

Directions

  1. eheat oven to 350. Grease a 15×10×1-inch baking pan. Whisk flour, sugar, baking soda, and cinnamon. In a saucepan, mix Dr. Pepper, butter and cocoa; bring just to a boil. Add to flour mixture, stirring just until moistened. Whisk in eggs. Transfer to pan. Bake until a toothpick inserted in center comes out clean, 18-22 minutes.

  2. For icing, mix butter, Dr. Pepper, and cocoa in a saucepan; stir over medium heat until smooth. Transfer to a bowl. Beat in the confectioners’ sugar, cinnamon and vanilla until smooth.

  3. Remove cake from oven’ place on a wire rack and let cool completely. Spread frosting evenly oven cake; sprinkle with pecans.
