Couscous and Roasted Vegetables

Ingredients

  • couscous
  • onions
  • garlic
  • chicken stock
  • lemon juice
  • lemon zest
  • oil
  • salt
  • pepper
  • roasted red pepper flakes
  • parsley
  • grilled veggies

Directions

  1. Saute onions and garlic

  2. Bring 1 1/3 cups of chicken stock to a boil. Add 1 cup of couscous and zest of 1/2 lemon and sauteed onions and garlic. Cover and leave for 5 minutes. Add 2 tbsp parsley, 1 tbsp lemon juice and 1/2 tbsp of oil. Season with salt, pepper and roasted red pepper flakes. Add grilled vegetables and serve with lemon pepper chicken and greek salad.
