Grilled Avocados

Ingredients

  • 6 firm avocados
  • Salt and pepper
  • Grapeseed oil
  • 3 tbsp balsamic vinegar
  • 1 tsp Dijon
  • 1/4 cup fresh parsley
  • 3 garlic cloves (crushed and quartered)
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 6 tbsp olive oil
  • More parsley, for serving

Directions

  1. Quarter avocados; season with salt and pepper and brush with oil. Grill over medium-high heat, turning, until marked all over, about 3 minutes.

  2. Combine vinegar, Dijon, parsley, garlic, salt and pepper in a blender. With the blender running, add olive oil and puree until smooth.

  3. Drizzle the dressing over the avocados and garnish with more parsley.
