Mushroom-Fontina Pizza

Ingredients

  • 12 oz. diced mixed mushrooms
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt and pepper
  • 2 large garlic cloves, minced
  • 4 tsp thyme, chopped
  • 2 tbsp sherry vinegar
  • 4 oz. shredded Gruyere
  • 4 oz. shredded Fontina
  • Grilled Pizza Dough (see recipe)
  • Chopped chives, for serving

Directions

  1. Saute mushrooms in olive oil and butter in a large skillet over medium-high heat until tender, 6 minutes; season with salt and pepper. Add garlic and thyme; cook 30 seconds. Remove from the heat and stir in vinegar. Combine cheeses. Grill the pizza dough, topping with half the cheese mixture, then the sauteed mushrooms, then the remaining cheese mixture after flipping. Top with chopped chives before serving.
